IV stands for Individual Values. IV's are not at all like EV's because IV's are given to you when you obtain the pokemon. Whether it be fresh out the wild, or fresh out an egg, the IV's will be determined at random and cannot be altered. Basically, IV's are given to you, you don't have to earn them. IV's range from 0-31 per stat. A pokemon who has 31 IV's in a stat, and is well EV trained in that stat will have a Maxed stat (based on the nature). Many people use the ditto+everstone method to get the desired pokemon with a good nature, and then check for IV's. This is what we call IV breeding. In order to check IV's, you can either have an "IV Battle", in which you look at your pokemon's stats on level 100 before EV training, or you can simply use an IV Calculator online.
